A perfect blend of the ancient grains – spelt and Khorasan with a liberal amount of sunflower, linseed and poppy seed blended throughout. This bread has a rich nutty taste with a bit of “crunch” that is highlighted and enhanced with the natural sweetness of the Khorasan grain.

Ancient grain bread is a new experience and can be served with any sweet or savoury accompaniment or is delicious just eaten on its own. Best of all, the children will love it! This bread has all the nutritional attributes of spelt and Khorasan, tastes great and is “healthy”.

Our very popular Farmhouse Rye is made with stone ground Rye flour & Spelt flour. This bread combines the nutritional and digestive benefits of sunflower kernels, linseed (flax), sesame seeds, poppy seeds and red lentils.

Sunflower seeds are very high in protein, fibre and in vitamin B. Linseed is high in soluble fibre, the essential omega 3 fatty acids and is one of the richest sources of lignans. Sesame seeds have a high level of calcium, magnesium, are rich in vitamin A and protein and has a strong antioxidant effect. Poppy seeds and red lentils add to the delicious taste and colour of this bread.

Combine all of the above with the slower digestive rate of highly seeded breads that release glucose more gradually into the blood stream, this bread should be included in a balanced healthy diet.

Mattisse Bakery has been baking authentic artisan sourdough since 2001, creating a range of delicious breads that use only the highest-quality ingredients.
All their breads are free from preservatives, additives, and chemicals, and they use natural sourdough cultures. Mattisse breads are also dairy and egg-free.
We primarily supply the Mattisse Gluten-free Buckwheat loaf and Buckwheat Fruit loaf, which both come in long-life resealable packaging.
Buckwheat is the base ingredient in Mattisse’s gluten-free bread, as it produces a nutty, flavoursome, and springy loaf that is also very good for you. Buckwheat is not related to wheat in any way, and coeliacs and the gluten-intolerant can safely eat it.

The recipe has been taken from the bible and crafted according to the scripture verse Ezekiel 4:9. Khorasan is an ancient wheat grain believed to originate from the Fertile Crescent in the Middle East. When compared with common, modern day wheat, khorasan has a higher level of proteins and minerals such as zinc and selenium which are vital antioxidants nutrients. The grain itself is much larger than common wheat as about twice the size and is much lighter in colour. Our sprouted khorasan loaf is popular for its milk, slightly nutty flavour. It is perfect for those looking for a high energy food and is a great alternative for people sensitive to modern wheat. it contains gluten however some people with sensitivities can tolerate the gluten in khorasan.

Spelt is an ancient grain which originates from Fertile Crescent of the Middle East. Our sprout spelt loaf boasts a mildly sweet and nutty flavour. The grain is known for its many health benefits. It is highly water soluble which allows the body to easily absorb its high level of nutrients including, vitamin B2, niacin, manganese, thiamine, copper, and magnesium.
